Colony have journeyed from the banks of the Ganges in India all the way to the hustle and bustle of Kuala Lumpur, they took a few diversions along the beaches of Sri Lanka and made some new friends at the golden pagodas in the beautifully untouched Burma.
We have taken the best memories and experiences we found on our travels and aim to invoke that in our menu, taking traditional dishes and re-imagining them in ways that we feel best represent the country of origin, It may be through the use of particular ingredients that is indigenous to the region or by breaking down the core foundations of a dish and building them back up again piece by piece in new and creative ways, all the while holding on to the important idea of staying true to the source.
All of the places we visited are former British colonies, the food from these countries flow through each other just as the people have done for hundreds of years, they influence each other in some ways more obvious than others, we want to showcase the idea of embracing migration and the huge impact it has on the culinary ecosystem.
It is often talked about the influence that the British had in the former colonies and whilst this is true it is important to realise that the Britain we know today has been shaped by Malaysia, India, Sri Lanka, Burma and the likes. Chicken Tikka is the most widly eaten dish in the UK, coconut is now one of the staples of English cooking and rice can be found in any kitchen you visit – all of these things integrated into the cuisine by the experiences and the people they brought back with them.
